Grown at elevations between 900-1,590 meters, these Yellow and Red Catuai, Catimor, and Parainema varieties express the unique terroir of Nicaragua's coffee heartland. The beans undergo a precise 12-14 hour fermentation before being dried on patios and raised beds, developing a remarkable depth of flavor.
